Ingredients:
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips
- 1 cup chopped walnuts (optional) Directions:
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a saucepan over medium heat, combine mashed bananas, unsalted butter, granulated sugar, and whole milk.
- Stirring constantly, bring the mixture to a boil.
- Once boiling, reduce the heat to medium-low and continue to cook, stirring occasionally, for 10-12 minutes or until the mixture thickens and reaches the soft ball stage (235°F/118°C on a candy thermometer).
- Remove the saucepan from heat and stir in vanilla extract and white chocolate chips until smooth and fully melted.
- If desired, fold in chopped walnuts for added texture.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Allow the fudge to cool at room temperature for about 2 hours, then transfer to the refrigerator to chill for an additional 2 hours or until set.
- Once set, use the parchment paper overhang to lift the fudge out of the baking dish.
