Garbage Bread
Also known as “Everything But the Kitchen Sink Bread” or Pizza Roll-Up Bread, this is a fun, customizable, and crowd-pleasing dish that’s perfect for game day, potlucks, or easy weeknight meals. The idea is simple: take all the tasty “garbage” (leftovers, deli meats, cheeses, veggies) you have on hand, wrap it in pizza dough, and bake until golden.
Basic Recipe: Deli-Style Garbage Bread
Ingredients
· 1 lb pizza dough (store-bought or homemade)
· 2 cups shredded cheese (mozzarella, cheddar, or Italian blend)
· 6–8 oz sliced deli meats (ham, salami, pepperoni, turkey)
· ½ cup pickled veggies (banana peppers, jalapeños, roasted red peppers – chopped)
· 1 tsp Italian seasoning or garlic powder
· 1 egg + 1 tbsp water (for egg wash – optional)
· Marinara or ranch for dipping
Instructions
- Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll dough: On a lightly floured surface, roll pizza dough into a 10×14 inch rectangle.
- Layer toppings: Leaving a 1-inch border, layer:
· Half the cheese
· Meats
· Veggies
· Remaining cheese
· Sprinkle with seasoning - Roll it up: Starting from a long edge, roll dough tightly (like a jelly roll). Pinch seam and ends to seal.
- Bake: Place seam-side down on baking sheet. Brush with egg wash for shine. Cut 3–4 slits on top. Bake 25–30 minutes, until golden brown.
- Rest & serve: Let cool 5–10 minutes before slicing. Serve warm with dipping sauces.
Popular Flavor Variations
· Pizza Garbage Bread: Pepperoni, sausage, mozzarella, pizza sauce inside, brush with garlic butter after baking.
· Buffalo Chicken: Shredded cooked chicken mixed with buffalo sauce, blue cheese or ranch, celery if desired.
· Breakfast Garbage Bread: Scrambled eggs, cooked bacon or sausage, cheddar cheese, diced potatoes.
· Philly Cheesesteak: Sautéed steak strips, onions, peppers, provolone.
· Veggie Lover’s: Spinach, mushrooms, olives, onions, artichokes, feta or mozzarella.
Tips for Success
· Don’t overfill – too many toppings cause leaks.
· Seal edges well to prevent cheese explosions.
· Let dough come to room temp for easier rolling.
· Use a sharp serrated knife to slice cleanly after baking.
· Great for using up leftovers – cooked veggies, taco meat, roasted chicken, etc.
Garbage Bread is the ultimate customizable, no-fuss comfort food. It’s basically a calzone’s fun, messy cousin!
