· ½ cup strong brewed coffee or water, warm

For the Coconut-Pecan Filling (German Chocolate Frosting):

· 1 cup (200g) granulated sugar
· 1 cup (240ml) evaporated milk
· 3 large egg yolks
· ½ cup (1 stick / 115g) unsalted butter
· 1 tsp vanilla extract
· 1 ⅓ cups sweetened shredded coconut
· 1 cup chopped pecans, toasted

For the Chocolate Frosting (Optional, for sides):

· 1 cup (2 sticks / 225g) unsalted butter, softened
· 3 ½ cups (420g) powdered sugar, sifted
· ½ cup (50g) unsweetened cocoa powder, sifted
· ¼ cup whole milk or heavy cream
· 2 tsp vanilla extract
· Pinch of salt


Instructions

  1. Make the Cake Layers

· Preheat oven to 350°F (175°C). Grease and flour three 8-inch or two 9-inch round cake pans, line with parchment.
· Sift together flour, cocoa, baking soda, and salt. Set aside.
· In a large bowl, cream butter and sugar until light and fluffy (3-4 minutes). Beat in egg yolks, one at a time, then vanilla.
