Ingredients:
- 1 medium head of cauliflower, cut into florets
- 8 oz (about 225g) mushrooms, sliced (any variety you prefer)
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (or fresh if available)
- 1 tablespoon fresh parsley, chopped (for garnish)
- Optional: Red pepper flakes for a bit of heat
Instructions:
- Prepare the Cauliflower: Start by washing the cauliflower and cutting it into small florets. This will help it cook evenly.
- Cook the Cauliflower: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cauliflower florets and sprinkle with salt. Sauté for about 5-7 minutes until they start to become tender and slightly golden.
- Add the Mushrooms: Add the sliced mushrooms to the skillet with the cauliflower. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms are tender and browned.
- Add Garlic and Seasonings: Once the mushrooms are cooked, add the minced garlic, black pepper, and dried thyme to the skillet. Stir well and cook for an additional 2-3 minutes until the garlic is fragrant, being careful not to burn it.
- Finish and Serve: Remove the skillet from heat. Drizzle the remaining tablespoon of olive oil if desired, and sprinkle with fresh parsley. If you like a bit of spice, add red pepper flakes to taste.
- Enjoy: Serve the garlic mushrooms cauliflower skillet warm as a side dish or a light main course!
