Ingredients:
1 medium cauliflower, broken into florets
1 teaspoon salt
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 teaspoon Dijon mustard (optional)
1 cup shredded cheddar cheese (or a mix of cheeses)
½ teaspoon black pepper
¼ teaspoon nutmeg (optional)
½ cup breadcrumbs (for topping)
¼ cup grated Parmesan cheese (optional)
Instructions:
Preheat the Oven: Set your oven to 200°C (400°F).
Cook the Cauliflower: Boil a pot of salted water and cook the cauliflower florets for about 5 minutes until slightly tender. Drain well and set aside.
Make the Cheese Sauce:
In a saucepan, heat butter over medium heat.
Add flour and whisk for about 1 minute to form a roux.
Gradually add milk , stirring constantly until the sauce thickens.
Stir in mustard, salt, pepper, and nutmeg (if using).
Add cheddar cheese and mix until melted.
Assemble the Dish:
Place cauliflower in a greased baking dish.
Pour the cheese sauce over the cauliflower, making sure it’s well coated.
Mix breadcrumbs and Parmesan cheese and sprinkle on top.
Bake: Bake for 20-25 minutes until golden and bubbly.
