Ingredients:
- 1 medium cauliflower, broken into florets
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups milk
- 1 teaspoon Dijon mustard (optional)
- 1 cup shredded cheddar cheese (or a mix of cheeses)
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg (optional)
- ½ cup breadcrumbs (for topping)
- ¼ cup grated Parmesan cheese (optional)
Instructions:
- Preheat the Oven: Set your oven to 200°C (400°F).
- Cook the Cauliflower: Boil a pot of salted water and cook the cauliflower florets for about 5 minutes until slightly tender. Drain well and set aside.
- Make the Cheese Sauce:
- In a saucepan, heat butter over medium heat.
- Add flour and whisk for about 1 minute to form a roux.
- Gradually add milk, stirring constantly until the sauce thickens.
- Stir in mustard, salt, pepper, and nutmeg (if using).
- Add cheddar cheese and mix until melted.
- Assemble the Dish:
- Place cauliflower in a greased baking dish.
- Pour the cheese sauce over the cauliflower, making sure it’s well coated.
- Mix breadcrumbs and Parmesan cheese and sprinkle on top.
- Bake: Bake for 20-25 minutes until golden and bubbly.
