Baked Cauliflower Cheese

Ingredients:

  • 1 medium cauliflower, broken into florets
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 1 teaspoon Dijon mustard (optional)
  • 1 cup shredded cheddar cheese (or a mix of cheeses)
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)
  • ½ cup breadcrumbs (for topping)
  • ¼ cup grated Parmesan cheese (optional)

Instructions:

  1. Preheat the Oven: Set your oven to 200°C (400°F).
  2. Cook the Cauliflower: Boil a pot of salted water and cook the cauliflower florets for about 5 minutes until slightly tender. Drain well and set aside.
  3. Make the Cheese Sauce:
    • In a saucepan, heat butter over medium heat.
    • Add flour and whisk for about 1 minute to form a roux.
    • Gradually add milk, stirring constantly until the sauce thickens.
    • Stir in mustard, salt, pepper, and nutmeg (if using).
    • Add cheddar cheese and mix until melted.
  4. Assemble the Dish:
    • Place cauliflower in a greased baking dish.
    • Pour the cheese sauce over the cauliflower, making sure it’s well coated.
    • Mix breadcrumbs and Parmesan cheese and sprinkle on top.
  5. Bake: Bake for 20-25 minutes until golden and bubbly.
